Beet, Fennel, And Pear Salad with Mint Oatgurt Dressing
Serving Size: 2 portions
Ingredients
2 Beets, yellow medium, raw
2 Beets, red, medium, raw
Salt as needed
Extra virgin olive oil as needed
Mint Oatgurt Dressing
Mint, chopped 2 Tbsp
Oatly Oatgurt 3 Tbsp
Extra virgin olive oil 4 Tbsp
Juice of 1/2 Lemon
Salt as needed
Fennel, shaved 1
1 ripe pear
Walnuts, toasted, chopped 2-3 Tbsp
Method
1. Using a sharp mandolin, slice the yellow beets and place them on the plate randomly. Do the same with the red beets, sprinkle with a pinch of salt and drizzle with extra virgin olive oil.
2. For the Mint Oatgurt Dressing: Mix the mint, yogurt, extra virgin olive oil, lemon juice and salt, set aside.
3. Drip some of the Mint Oatgurt Dressing on top of the beets, add the shaved fennel, shaved pear, and crushed walnuts. Drizzle more dressing on top.
