Hi there Drew!
Our cream cheese can absolutely be used to make a cheese(minus the cheese)cake! We'd recommend googling some vegan cheesecake recipes or alternatively, you can choose your favourite cheesecake recipe and just swap out the dairy cream cheese for Oatly. Or, maybe you're feeling adventurous and you create your own Oatly cheesecake recipe which you can then post here to help out your fellow plant-based chefs...
