Mild & Creamy Tomato Soup

When you don’t know what to have for dinner, tomato soup is the answer.



Tomato soup:

1 yellow onion

1-2 garlic cloves

800 g (3 1/3 cups) crushed tomatoes

1 cube vegetable broth + 5 dl (2 cups) water

1 heaping cup (3 dl) Oatly Creamy Oat (or Oatly Barista Edition)

1 tsp sugar

Seasoning: oregano (or other herbs), salt and pepper

Canola oil for frying

Creamy Garlic Baguettes:

100 g (about 1/2 cup) Oatly Spread Natural* (or other vegan cream cheese)

1 garlic clove, pressed

1 tbsp finely chopped parsley

Salt and pepper

1 medium large baguette

*In a hurry? Use Oatly flavored Oat Spread (Garlic Cucumber, or Tomato Basil) instead of making your own crème.


1. Chop the onion finely and sauté for 10 minutes in canola oil.

2. Add the garlic at the end.

3. Then, let the crushed tomatoes, water and broth cube, sugar and spices go into the saucepan.

4. Leave the soup to simmer for about 30 minutes. Meanwhile, make the garlic baguettes.

Garlic Baguettes:

1. Set the oven at 200°C (about 400° F).

2. Mix the oat spread with garlic and parsley.

3. Season to taste.

4. Cut the baguette lengthwise with 2 - 3 deep cuts, and fill these with the oat spread crème.

5. Wrap the baguette in foil and bake in the oven until the crème melts, about 15 minutes.

6. Cut the baguette into portion-sized pieces.

7. Mix the soup into a smooth consistency.

8. Add Creamy Oat and also water if needed.

9. Season to taste.
